Easy, nutritious and delicious, a fantastic snack during Pregnancy or Postnatal Recovery, as a healthier sweet treat or a lunch box filler!
This is a recipe that we make regularly, and we even change it up every now and again, but always return to our favourite flavour Choc mint. I make this as a slice, packing it into a square 20cm dish so that I don't have to roll each one individually and make a big mess.
Our daughter eats the mixture straight from the food processor!
This is a fantastic recipe for Pregnant and Postnatal Mummas who need to manage constipation and prep for birth because of the dates. And of course, they are great for everyone else too because they are delicious and nutritious unless you have a nut allergy!
Chocolate Mint Energy Balls
Ingredients
1 cup raw nuts (macadamias, cashews, almonds etc, I use a mix of all three)
¼ cup sunflower seeds
10 pitted Medjool dates (about a cup, other dates will be fine, soften first in hot water for 5 minutes if hard)
1 ½ cup coconut
2 tablespoons honey or sugar-free maple syrup
Pinch salt
⅓ cup raw cocoa powder
Vanilla essence
1/4 cup melted coconut oil
1-2 tsp peppermint essence (you can substitute for different flavours here)
Directions
Prepare a 20cm square dish for the mixture (if made as a slice) by lining it with baking paper. Blend nuts, then add seeds and dates and blend until fine. Add coconut, honey, salt, cocoa and vanilla, and blend.
Melt coconut oil in the microwave until just melted and add peppermint essence to the oil. Add this to the rest of the mixture and blend one last time.
Turn out into a dish and flatten or roll into balls. Refrigerate, best kept in the fridge, will soften if left at room temperature.
